Cupcakes in a cone



So my oldest just turned 7 and asked me this year asked me to make her class cupcakes in a cone. I thought what a fun idea but wanted to be sure to make it a post her because I was so uneasy on how to do it!

First for foremost go to your local pizza shop and ask for a clean pizza box. This will be use to transport your cupcakes to school. I have NO idea how else you could get these to a different location without them falling all over!

okay step 1Make your favorite box of cake mix. i kept it single but of course you can go from scratch. We used Funfetti

place your cones inside of the cupcake pan standing up

fill cones 1/2 way. I did it a little more as you can see, and they rose too much and started to drip over!

bake 350 for 18-20 mins

as the cupcakes cool, cut little circles in the top of your pizza box! the cones will sit right through

the fun part, ICING! you could buy the cans with icing that you can swirl out of i think you would need about 3 and at 4.00 each i wasn't going to go there. So i bought a chocolate icing and a strawberry icing. spooned it into a zip lock bag, clipped the corner and made it look soft served. My strawberry icing was whipped and worked alot better.

Eczema Woes

So Loco has had severe eczema as a child really bad. I mean we had to keep him in sleepers so he would not itch because he would get chronic staph infections. I took cows milk out of his diet and I have seen a HUGE improvement. Now thats its summer he has been eating ice cream alot so I need to work on an alternative for that.

Now me. It started in January and has been constant and severe for me. Covering 70 percent of my body is eczema. It looks more like hives, the itching and pain is so unbearable. Hence why my blog has been lacking. In January I went to the dermatologist and was given 2 steroid creams and atarax. All was good and well till I stopped the steroid cream. The flare ups would be back in a day. I went to an Allergist the other day, and turns out I am allergic to all the trees and grass and pollen in our wonderful rural country land. On top of that, it says I am allergic to Almonds....but Ive never had a reaction like  you would think, I just have been drinking Almond milk. Im starting to think that was a false positive. I am severely allergic to Lentils though......and i developed that as an adult. Go Figure.

I have to stay off histamines for a few days to get blood drawn and see what else it say. Im beside myself. I dont understand how this happend to me as an adult. I eat healthy, cook from scratch and overall am stress free.

My next step is elimination diet but i have no idea where to begin. Anyone? Wanna guide me?

Yesterday I got more creams from the dermatologist including protopic as a maintenance.....

I was already smelling like coconut since i rub down in that a few times a day......

this is so horrible.

Ive seen the commercials for Garnier Fructis, the girl with the long strong hair who can pretty much pull a truck through mud. I have never tried this brand before and was super excited when BzzAgent contacted me to try it out for free. I have used it for 2 weeks now and I can not believe what a difference I can see it my hair. Its stronger, healthier and much more alive than it use to be. I have officially been convinced to stop getting the 1.00 shampoo and conditioner i was using and to spend a little more on my hair products! You really need to try it out and see for yourself!

Whats For Dinner - Peruvian Style


So I cook Peruvian/ Spanish food 99% of the time. I am not from Peru, but my amazing husband is. I lived with his family before we got our own place and that's what I got accustomed to cooking and eating. LOVE IT! Don't get me wrong, we still do BBQ, and burgers but most of the food is authentic Peruvian cuisine.

Now how did YOU do last week? I cant complain, alot was accomplished, still more to do!

1. Read 100 pages in The Glass Castle. ( i have started this book a thousand time and never keep going, despite loving it. I have not read a book in over 11 years, i know crazy but true. So, I am saying I will start, and I will see how I do.
NOPE didn't do it, BUT me and DH did start reading 50 Shades of Grey together!

2.Start freezer cooking

3. Do school work with Loco everyday. I would like to have him reading before he enters K, and he is off to a great start

4. Keep all laundry done everyday and to NOT pile up

5. Keep all of DH's and the kids laundry ironed and not to grow an "need to be ironed tree in my room

6. exercise for at least 30 mins at least 5 days
     AGAIN FAILED! but i did alot of yard work.....
7. Read Aloud to the children everyday
     BUSTED FOR ANOTHER FAIL
8. Give my 6 year old an hour of one on one time at least 3 times this week

Ive met Siri......

Have you met Siri? The voice on the iphone? She is amazing. Reminds me what to do, writes my text messages, and gives me the weather before I even get out of bed. The possibilities are endless.I wasnt sure what the hype was all about, and now I do. Technology is amazing.

4 Weeks To Fill You Freezer - Attempt 1

I mentioned I wanted to start freezer cooking. (Thanks to the idea from Money Saving Mom) What that meant for me is, get something, anything, in the freezer ready to be used at a later date. My plan for today was some Banana Bread. So I headed to the store and got the essentials, plus a nice gallon of milk. Put groceries away and BAM! I DROP THE GALLON OF MILK AND THE PLASTIC BREAKS AND THE WHOLE GALLON SPILLS UNDER THE FRIDGE. Now if you saw my kitchen, the stove sticks out a bit so the fridge cant be easily pulled out. To be honest, it hasn't been pulled out in over 3 years since  living in this house! I know, gross, but its so much work to get it out. Today, I was left with no choice.  After 2 hours of figuring HOW to get it out, getting it out and cleaning the most disgusting place I've ever seen, I was ready to go.

So I made 2 loaves of Almond Bread. One with sliced almonds and one without, both loaded with flax seed. i put half of each in the freezer and kept the others sliced and ready for eatin!


While those were in the over, I worked on making some Pancakes. I had enough of my homemade pancake mix for 14, but after me eating one and the baby eating one, i stuck 12 in the freezer.

I have a giant Tupperware I keep my mix in. here is that receipt....I just keep making it over and over till my Tupperware if full, its usually like quadrupled if not more.

Ingredients

Pancake mix:

Pancake batter:

  • 1 egg
  • 1 cup milk
  • 1 tablespoon melted butter

For the pancake mix:

Directions

Mix the above ingredients together and store in a jar.

For the pancake batter:

For each 1 cup pancake mix, add 1 egg, 1 cup milk, and 1 tablespoon melted butter. Do not over mix.

Heat a flat griddle or pan over medium-high heat.

Spoon drops of 1 1/2 to 2 tablespoons of batter onto the hot griddle and when bubbles appear on the surface of the little pancakes, flip them over to make them golden brown on both sides. A minute or so a side should do it.


They must have been pretty good because check out baby!


Now i realized I needed to figure out dinner. I had no motivation for anything extravagant and since I was already freezing things, i Decided to make 2 pizza doughs, one for dinner one for freezer.
Doesn't that just look yummy! I made an extra cheese spinach and chicken pizza, hands down amazing! (no pic of the frozen dough in the freezer!

Homemade Pizza

Pizza Crust: 1 Tbsp. active dry yeast
1 cup warm water (105 to 115 degrees F.)
1 tsp. sugar
1 tsp. salt
2 Tbsp. vegetable oil
2 1/2 cups flour
Dissolve the yeast in the water. Add the rest of the ingredients in and mix.
Dump onto a floured surface.
Knead into a smooth dough (five minutes or so).
Roll out and press down onto a greased pizza pan.
Add toppings. (Have fun and be creative with this! Our favorite variety is salsa or barbecue sauce, diced cooked chicken, and cheese.)
Bake at 450 degrees F. for around 12-15 minutes until the crust looks crispy and lightly browned.



Lastly, i worked on some cinnamon buns, I knew it was pointless to freeze these, they are just being eaten left and right. (This is my desert tray or breakfast tray)

All said and done i was in the kitchen between 11-2:30, plus the time to finish off the pizza at dinner. It wasn't a bad day, and I do have items in the freezer now. My boy was a great help washing dishes ( yes i had to rewash them but does it get any cuter?!)

Fill your Freezer

Well, I took the day and freezer cooked. I feel like i was in the kitchen the whole day (and really i was)but didn't get much done!
First off I did a batch of pancakes 14 to be exact, but 2 were eaten!
I also made some pizza dough for the freezer and used one for today
I made 2 loaves of banana bread one with almonds one with out and both LOADED with ground flax.
I also made Cinnamon buns but those are NOT going into the freezer!

Green Tea Mango Mint Smoothie!


Okay, so I just made the most DELICIOUS smoothie ever. Hands down my new favorite. The house work is done, dinner is cooked, laundry finished. It was a non stop morning and I just wanted to sit down with something cold, refreshing and satisfying. I am a green tea lover, mint lover and mango lover. I figured....why not put it all together. So here's the details

Cold cup of Green Tea, (I  brewed mine for like 10 minuets while i cleaned up the dishes, then just put       the whole glass in the freezer to cool off while i showered)
1 cup of frozen Mango
3-4 Fresh Mint Leaves
1tsp of honey (or other sweetener)

Blend it all together and ENJOY!

I would like to start setting goals for myself to get done. I got the idea from  Money Saving Mom and her awesome blog. But really, to sit down, look at my list and get it done will feel so much better. So, here is week 1, lets see how I do

Toddler Basics - Month 13

Okay I did it, I called my baby a toddler. I mean, she is 13 months which technically is OUT of the baby phase. And.... SHE TODDLES! not full time, not all the time, BUT she does toddle. It is the cutest thing to see. Its funny, my other 2 were walking by a year old, not her. Then again, i didnt "push" it the way i did with them. I remeber practicing them to walk, helping them, kinda forcing them. With her, everything has been to HER own beat, and its been so amazing to see as she let go of the couch on her OWN to take 2 steps and sit down. She is so cautious, never falls, just graciously sits. Love her. She is now about 19 pound, 29 inches. My little peanut. She has been growing in speech too! Lets see, she says, mommy, daddy, hi, hot, no (yet she really says no no no no no with her little pointer finger slighly waving back and forth), she tries to say boo and she tries to say bye, but the dont really come out the way they should. And, night night she can say very clear! She has learned to hold her ground when it comes to fighting with her brother and claiming what she wants. We have had some sleep hiccups too. Since she learned to roll over at a year old (yeah a year is right) she stands in her crib and screams. ITs getting better but i have to admit, she is a nightly visiter to our bed. I am still breastfeeding and I have given up going to her room 4 times a night. So she falls asleep in her bed and when she wakes I just bring her to mine. It is totally NOT what i wanted to do for her, but I guess plans change as we go along day by day.

Fallen, but ready to get back up

I've fallen off the blogger waggon latley. Things have just gotten so busy in everyday life, that ive neglected to write, neglected to read my favorite blogs. I was working a 9-5 and it just didnt fit in to my life. Hats off to all you bloggers who can work full time, take care of kids, cook, clean AND blog. It just wanted happening. But.... I AM BACK! Its May first and I am here to stay. Ill be doing lots of reviews and giveaway, Baby Basics, (although she is no longer a BABY at 13 months old! I will also be showing the teachings I so with my son and the awsome cooking I do through my days. I hope this becomes one of your daily reads again and i bring smiles to your face!
